Step 1

Grill poblano and jalapeno peppers directly on the stove over high heat. Turn them until the skin is roasted. It should take about 5 minutes. Place the peppers in a sealed plastic bag and let the peppers suck for 5 minutes.

Remove from the bag and with the aid of a napkin, remove the skin from the chilies, cut the stems, dewatering and remove the seeds. Cut the peppers into thin strips.

Preheat a medium saucepan over medium high heat for 2 minutes. Add the Sabrosano oil and heat for 30 seconds. Lower the temperature to medium heat and add the onion. Saute for 2 minutes and add the garlic, slices, salt and pepper. Saute for about 5 minutes

Add the cream, the corn and let cook 3 minutes. Add the cheese, stir well and wait for the cheese to melt completely.

Serve and accompany with corn tortillas and enjoy.

  • 1 ½ cup diced white onion
  • 1 tablespoon finely chopped garlic
  • ¼ teaspoon ground black pepper
  • ½ teaspoon of salt
  • ½ Cup of yellow corn
  • 1 ½ cup of cream
  • 2 cups grated chihuahua cheese
  • Corn tortillas to accompany
