Directions

Step 1

Cut the potatoes into strips of 1 x 1 cm and 10 cm long each. Put them in a big container and cover them with cold water. Refrigerate for 2 hours

Step 2

Meanwhile, heat the butter at medium fire in a small casserole. Add the flour and cook until it is soft, approximately for 2 minutes. Add the shallot, garlic and cook for 2 more minutes.

Add the meat broth, ketchup, vinegar, English sauce, salt and pepper

Step 3

Boil the sauce, stirring constantly for about 10 minutes, until it is thick. Remove from fire.

Heat the oil in a pot a medium fire. Meanwhile, remove the potatoes form the refrigerator, drain them and dry them with a paper napkin.

Step 4

Add the potatoes to the oil and fry them until they are soft and lightly crunchy. For approximately 8 minutes.

Remove them from fire and remove the excess oil

Preheat the oven to 350° Celsius.

Step 5

Increase the fire of the Sabrosano oil to high fire and fry the potatoes one more time for approximately 8 minutes, until they are brown. Remove from fire and dry them.

Pour the sauce on the potatoes and cover them with cheese. Bake them for 5 minutes so the cheese melts.

Ingredients

4 Potatoes with skin
4 tablespoons of unsalted butter
¼ cup of flour
1 chopped shallot
1 garlic clove
1 cup of meat broth
2 tablespoons of ketchup
1 tablespoons of cider vinegar
½ tablespoon of English sauce
Salt and pepper to taste
2 cups of Sabrosano oil
2 cups of Chihuahua cheese
