Directions

Step 1

Separate bayo beans from water and liquate them with the beans juice. Keep adding the juice gradually until you have all mixed.

Step 2

In a medium cooking pot, heat the chicharrón at low fire and add the beans mixture. If the mixture is too thick, add more beans juice. Let it simmer and set aside.

Step 3

In a medium pan, add the chorizo sausage with Sabrosano oil and fry the tortillas. Once the tortillas are ready, fill them with the Oaxaca cheese and let it melt. Flip the tortilla to make it crunchy.

Step 4

Place them in a plate and shed the beans sauce with chicharrón.

Step 5

Serve with lettuce, cream, panela cheese and enjoy!

Ingredients

  • 3 cups of bayo beans
  • 1 cup of bean juice
  • ½ of chorizo sausage package
  • 15 corn tortillas
  • ½ of Sabrosano oil
  • 1 cup of grated Oaxaca cheese
  • 150 gr. Of chopped chicharrón
  • ½ cup of grated panela cheese
  • Chopped lettuce
