Directions

Step 1

1. Remove the chilies extremities and seeds and set aside

Step 2

1. In a medium pot, boil the chilies with water, the vinegar, onion, pepper, cinnamon, cumin, cloves, salt and bay leaves for 5 minutes. Remove just the bay leaves and liquate the rest. Strain and set aside.

Step 3

Put the pig leg in a large baking container and season well with salt and pepper. Cover the pig leg with the chilies sauce adding the mezcal.

Make sure to marinate well on both sides. Cover it and leave it in the refrigerator for 1 to 12 hours.

Add 2 cups of water and bake all covered up to 175° Celsius in the oven. Considerate cooking approximately for 1 hour per kilo of pig leg. Once it is ready, remove from oven and let it cool to cut it.

Step 4

In a medium pan, add Sabrosano oil along with the remaining sauce mixture. Add 2 tablespoons of flour to thick. Stir constantly.

Serve the sliced pig leg, cover with the sauce and accompany with apple salad

2 ancho chili
1 cascabel chili
1 piece of morita chili
1 guajillo chili
2 cups of water
½ cup of white vinegar
½ onion
10 garlic cloves
½ teaspoon of pepper
½ teaspoon of ground cinnamon
1 pinch of cumin
½ teaspoon of clove
½ tablespoon of salt
4 bay leaves
Salt to taste
Pepper to taste
1 pig leg
1 cup of mescal
2 tablespoons of flour
2 tablespoons of Sabrosano oil
